feasting on weeds

I’m Clare. I’m a cook, recipe developer, wanderer, eater and foraging guide living in Belfast. I care about nature and about what is on my plate and Feasting on Weeds is all about inspiring you to care or even be excited about those things too. Food and the outdoors has been a big part of my life since forever and I have been foraging for exotic wild ingredients in the Irish countryside, seaside and city and incorporating them into unique and sometimes experimental dishes for a decade.

Developing our relationships with the outdoors in a way that values the environment and celebrates our landscape is really important to me and, as well as guiding groups on my own events to identify wild food, I have worked with various groups and organisations such as the National Trust, Eastside Partnership (Belfast), Womens TEC, NI Science Festival as well as running my own events and collaborations with chefs, mixologists and other small businesses.
